Cast Iron Skillet Corn Bread From Nordstrom cookbook Ingredients: 1/4 cup vegetable oil 1 cup yellow cornmeal 1/3 cup flour 1 tsp. baking powder 1/2 tsp. salt freshly ground black pepper 1 cup buttermilk 1 egg, slightly beaten 2 Tbsp. water 3/4 cup whole kernel corn Preheat oven to 400 degrees. Pour the vegetable oil in a 10" cast iron skillet and put the skillet in the oven while it preheats. Mix the cornmeal, flour, baking powder, salt and a few grindings of pepper in a bowl. In a separate bowl, mix the buttermilk, egg and water. Mix the wet and dry ingredients until moist. Mix in the corn. Carefully pour the batter into the pre-heated pan. Bake for about 20 minutes or until the bread has pulled away from the side of the pan. Serve immediately. Makes about 8 servings. This is not as good the next day so only make as much as you think you'll need for the one meal.
