Quinoa and Red Grapes Salad 1 cup quinoa (rinsed) 2 green onions, chopped 2 cups water 4 tsp. honey 2 Tbsp. sliced almonds 4 tsp. cider or balsamic vinegar 3 cups seedless red grapes, halved salt and pepper butterhead lettuce leaves and watercress Boil quinoa in sauce pan with water. Cook until tender (about 10-15 minutes). Remove from heat and cool covered. Toast almonds, if desired. Put all ingredients together except greens and almonds, mix. Just before serving, stir in almonds, serve on lettuce with watercress.
