Quinoa Banana Bread 1 3/4 cups quinoa flour 1/2 cup white sugar 1/4 cup brown sugar 1 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 2 eggs lightly beaten 1 stick melted butter (cooled) Between 2 ripe bananas, mashed 1 tsp vanilla extract Mix together butter, banana, eggs, and extracts. Sift together the dry ingredients in a large bowl, then fold the wet ingredients in. Do not overmix. Bake in a buttered loaf pan in a 350 degree oven until done, about an hour.
