Quinoa Basic recipe – use as a substitute for brown rice or pasta, in soups, or cold in salads. 1 cup quinoa 2 cups chicken broth (or water) 1.Before cooking, the seeds should be rinsed to remove a bitter-tasting coating called saponin. This is typically already removed when buying quinoa in the U.S., but rinsing is still a good idea to remove any residue that may remain on the seeds. Place quinoa in a strainer and rinse thoroughly, watching for soapy suds which should be washed away. 2.Put in a pot and dry toast until a few grains begin to pop (this is an optional step, but enhances the nutty flavor). Add the chicken broth or water, bring to a boil, cover and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let stand for 10 minutes. Fluff with a fork.
