Mozzarella Cups Serves 6-8 as appetizer 1 package (15) frozen phyllo cups 1/2 cup store-bought or homemade prepared pesto Fresh mozzarella, chopped to dime-sized pieces 6-8 roasted tomatoes (Wegmans olive bar) 1/4 cup chopped fresh basil Preheat the oven to 400 degrees. Let the phyllo cups sit out about 10 minutes to thaw. Put a dab of prepared pesto in each cup. Top with a pinch of fresh basil and one piece of fresh mozzarella. Finely chop the roasted tomatoes and place a small amount on each cup. Bake in the oven for about 8-10 minutes until bubbly.
