Mini Polenta Sandwiches 1 tube prepared refrigerated polenta Olive oil Sandwich fillings such as: - Plum tomatoes, sliced - Fresh basil leaves - Fresh mozzarella, sliced - Roasted red peppers - Baby spinach - Brie, sliced Preheat oven to 350. Slice polenta into ¼” slices. Heat olive oil in nonstick skiller over medium high heat. Add polenta slices and cook for 2-4 minutes per side until crisp and light brown. Remove to paper towel to drain. Make sandwiches with polenta slices and chosen fillings. Place on baking sheet and bake for 7-8 minutes until cheese melts and sandwiches are hot.
