Jalapeno and Cheddar Honey Hush Corn Bread From Dinosaur BBQ Cookbook Ingredients: 1 1/4 cups yellow cornmeal 1/4 cup sugar 3/4 cup flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1 cup buttermilk 2 eggs, slightly beaten 1/2 tsp. vanilla 1/4 cup melted butter 1 cup shredded cheddar cheese 1 diced jalapeno pepper 2 Tbsp. honey Preheat oven to 350 degrees. Grease 8x8 inch baking pan. Put the pan in the oven and let it heat up while mixing the ingredients. Mix the cornmeal, flour, baking poweder, baking soda and salt in a bowl. In a separate bowl, mix the buttermilk, eggs, vanilla and melted butter. Mix the wet and dry ingredients. Stir in the cheese and pepper. Pour into pre-heated pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Brush the top of the bread with the honey. Cool for 10 minutes in the pan before cutting into squares. Serves 9-16, depending on how you cut it.
