Beignets 1 bottle (48oz.) vegetable oil 2 cups self-rising flour 2 Tbsp. sugar 1 egg 1 1/4 cup milk Confectioners sugar Heat oil in a deep skillet to 375 degrees. In a bowl, blend flour and suger. In another bowl, blend egg and milk. Add to dry mixture. Beat to a thick batter. Drop by tablespoon into oil. Deep-fry until golden brown (5-7 min). Drain on paper towel. Sprinkle with confectioners sugar. Yield: About 15
